Abstract;Denaturation of proteins by decreasing temperature- Cold denaturation- has attracted keen attentions from the view point of protein higher order structure formation. In this report we discuss this denaturation based on the general treatment of two-state transition of the protein with temperature and pressure as variables. Actual experimental observations on vanious proteins, mainly proteolytic enzymes, will be presented and the results are to be discussed on the basis of structure deformation-formation of proteins.
