| Abstract;An inner cylinder rotary type fermenter suitable for culture of filamentous fungi, which overcomes the disadvantages of bubble column and stirred tank, was developed. It is proven that the fermenter is able to be effectively applied in the field of cultivation of raw materials of which suspended solid (SS) concentrations are high. The development aimed at an effective utilization system of shochu stillage. The shochu stillage sterilized by heating is accepted in the fermenter, where aspergillus is cultured. Almost of all organic substances decomposed easily in the stillage are utilized in about 20 hours, so that the aspergillus proliferates. The filtration performance of the solid matters in the stillage is improved, and the organic substance load decreases, which makes water treatment easy. The application of resultant dry fungi to feed for livestock,feed for marine products, seasoning raw materials, soy sauce, and miso are being studied. How it can contribute to the environment is evaluated. To ensure the application of dry fungi, the safety is considered first of all, and the utilization is limited to only the kinds of fungi actually used in the food industry. |
