Abstract;This paper defines proteomics as the research which analyzes the functions of individual protein due to the difference of its expression, and specifies the intermolecular interaction by comprehensively understanding the protein group which the specific cell expresses under various environments. It describes how to determine the amino sequences adjacent to N-end, and how to identify modification groups at the N-end by using deblocking aminopeptidase derived from an extremely thermophilic archaebacterium, Pyrococcus furiosus.
