Abstract;Although xanthan gum (XA) and hyaluronic acid(HA) have been considered as non-gelling polysaccharide, XA and HA form hydrogels if the aqueous solution are annealed at a temperature in sol state and then cooled (annealing and subsequent cooling induced gelation). Annealing temperature and concentration dependency of the viscoelasticity of XA hydrogels was investigated by a cone plate type rheometer. It was found that the storage modulus G' of hydrogels increased with the increase of the annealing temperature and the concentration. The change of viscoelasticity of solutions in annealing process was also investigated by viscoelastic measurements. (author abst.)
