| Abstract;Phase transitions of carboxymethylcellulose(CMC)-water and alginate(Alg)-water systems were investigated by differential scanning calorimetry(DSC) in order to clarify supercooling of water in polysaccharide hydrogels. Crystallization temperature of water in polysaccharide hydrogels shifted to lower temperature side with increasing cooling rate. Crystallization enthalpy (.DELTA.Hc) also decreased with increasing cooling rate. However, melting enthalpy (.DELTA.Hm) kept almost constant value. Therefore, it is considered that the difference of .DELTA.Hm-.DELTA.Hc came from supercooled water. The amount of supercooled water in hydrogels increased with increasing cooling rate.
