Abstract;It is important to prevent oxidative deterioration of packaged foods by removing oxygen during filling and sealing process. This paper details the procedures for exchanging the headspace gas by nitrogen and carbon dioxide mixture in a plastic cup. The device named the Carbon Dioxide Monitoring System for assessing the mixed gas concentration during operation is fitted in the piping of gas exchange equipment. This system removed effectively the enclosed oxygen in the headspace. After sealing, the cup maintained under slightly reduced pressure due to dissolution of carbon dioxide into foods. The results proved that this system can automatically monitor and control the carbon dioxide concentration in the piping within 1% deviation. The system installed on commercial production lines proved consistent gas exchnage with any type of products in either continuous and intermittent operation. (author abst.)
