| Abstract;The quality of various foods packed in plastic cups by the Carbon Dioxide Monitoring System and behavior of carbon dioxide in the headspace were investigated. The results showed that carbon dioxide influenced neither taste nor color of the foods. The influence of carbon dioxide onto pH varied with foods. The pH slightly decreased with some foods. The good appearance of container was maintained by proper carbon dioxide concentration keeping the slightly reduced inner pressure. Absorption of carbon dioxide by foods equilibrated with one day after processing. The absorption ratio depended on the rate between headspace and volume of filled foods. The Carbon Dioxide Monitoring System proved commercially applicable with retaining quality of foods and maintaining container's appearance of plastic cups. (author abst.) |
