Abstract;Regarding the kinds, the manufacturing method, and the use of dried foodstuffs, the publications of applications which had appeared between 1885 and 2002 was investigated.Especially, dried rice, instant rice cake, cereals, premixes, instant noodles, etc. were mainly reported.As a result of the survey, the following was presented: 1) Transition of the output of dried foodstuffs; 2) Effect of the nutrient composition of dried foodstuffs; and 3) Manufacturing methods and use of dried rice, instant rice cake, premix, and instant noodle, and yearly numbers of the publication of applications.
