Abstract;ESR spectra of the radicals derived from polyphenols and alcohols by the reaction with the hydroxyl radical (OH) were measured using the rapid flow-ESR method. Phenoxy and hydroxyalkyl radicals were formed from them, respectively. Superposing spectrum of phenoxy and hydroxymethyl radicals was obtained when polyphenol and ethanol were mixed and were reacted with OH. The ratio of the reaction rate constant of the polyphenol and ethanol was calculated from the integrated curve. Bond dissociation energy (BDE) of each bond of the antioxidants was obtained by MO calculation, and the relationship between BDE and the activation energy was examined. (author abst.)
